8 cups Steamin’ Greens, finely chopped
2 ½ pounds red potatoes, cut into 1-inch chunks
1 cup (1/2 stick) butter, softened
1 cup sour cream
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon salt
1 teaspoon black pepper
- Place the potatoes in a soup pot; add enough water to cover the potatoes. Place the Steamin’ Greens over the top, and bring heat to a boil over high heat.
- Reduce the heat to medium, cover, and cook for 15 to 20 minutes, or until the potatoes are fork-tender; drain then place the mixture in a large bowl.
- Add the remaining ingredients and, using an electric beater, beat the mixture until smooth. Serve hot.
